What’s for dinner??????, the never ending question on my mind, day after day, as I try and come up with quick, yummy and healthy dinners to feed my family.
This was my invention last night, combining simple ingredients and 15 minutes later, we had a really WOW dinner that we all really loved! Using a few ‘cheat’ ingredients, effort required is minimal…..don’t we LOVE that!!
INGREDIENTS
- 1 Packet prewashed mix greens
- 1 Avocado (peeled and diced into small cubes)
- 1 Tomato (diced)
- 1/2 Continental Cucumber (peeled and diced into small cubes)
- Rump Steak (trimmed of any excess fat) – allow 100-150 grams per person
- Paul Newmans ‘Asian’ Salad Dressing.
PREPERATION
Take the Rump Steak out of the fridge 15 minutes before you want to cook it.
Heat frypan to maximum heat. Spray pan with non stick cooking spray.
Brown the Rump, turning only once. Does not need to be cooked through, unless you just can’t cope with raw beef.
Place the Rump on a plate an cover with foil.
Prepare the plates with salad leaves, avocado, tomato and cucumber. Pour the dressing onto a dessert spoon and drizzle over the salad, as if you pour directly from the bottle you can end up with a too much. If you like things hot, you can always sprinkle a little fresh chilli on your salad.
Place the Rump steak onto a chopping board and using a sharp knife, thinly slice, and place on top of the salad.
Smile and serve, oh so easy, and oh so yummy!! Enjoy……..
